Lollipop Lamb Chops with Chimichurri Sauce
Grilled lamb chops are an easy dinner that you can have ready to eat in 2 hours! A chimichurri marinade adds the flavor of fresh herbs to the juicy chops. This grilling recipe makes a delicious summer dinner.
Ingredients (Lamb Chops)
8 lamb chops (½ “ – ¾ “ thick)
4 cloves of garlic (pressed or minced)
1 tbsp of Infusious Olive Oil
1 tbsp of Infusious Rosemary Butter
2 tspn Kosher salt
1 tspn cracked black pepper
¼ tspn cardamom (cinnamon for substitute)
¼ tspn brown sugar
½ tspn lemon zest
Instructions

Marinate all of the above ingredients together and refrigerate in an airtight bag for 1 hour.

Ingredients (Chimichurri Sauce)
1 shallot finely chopped
3 cloves of garlic pressed or chopped
1 large Jalapeno or serrano pepper chopped
½ cup cilantro chopped
¼ cup flat parsley chopped
2 tbsp oregano chopped
¼ cup Infusious Olive Oil
½ cup Olive Oil
½ cup red wine vinegar
1 ½ tspn Kosher salt
Instructions

Combine all the above ingredients together in a bowl and chill until ready to serve.
Cooking Instructions
- Rest marinated lamb chops at room temperature for 30 minutes before grilling, pan searing or baking.
- Add a generous amount of the Chimichurri sauce to the cooked lamb chops. Enjoy with a fresh salad and our Infusious Green Goddess Vinaigrette and your favorite accompaniment of pasta, rice or potato.
