Green Spaghetti with Chicken
Ingredients (Chicken)
- 4 Chicken Breasts grilled, pan seared or baked.
- Chicken Marinade:
- ½ oz of Infusious Olive Oil
- ½ oz of Infusious Butter
- Salt
- Pepper
- Garlic powder
- (Marinate for at least 1 hour)
Ingredients (Green Spaghetti)
- 2 poblano peppers
- 1 oz Infusious Olive Oil
- 1 8oz block of cream cheese
- 1 garlic clove sauteed
- ½ cup onion sauteed
- 8oz sour cream (or Mexican table cream)
- ½ cup chopped cilantro (or fresh spinach)
- 2 tspn chicken powder or cubes
- 1 cup pasta water from spaghetti
- 1 lb spaghetti noodles
- Grated cotija cheese (or parmesan cheese)
INSTRUCTIONS
- Boil spaghetti in salted water. Reserve ½ cup of pasta water for the sauce.
- Flame roast or char poblano peppers – cover with plastic wrap and sweat to easily remove the skin and remove the seeds
- Combine roasted poblano peppers, garlic cloves, onions, cream cheese, sour cream, cilantro, chicken powder and pasta water in a blender until creamy smooth
- Chop chicken breasts and place over spaghetti
- Ladle green spaghetti sauce over chicken and pasta
- Garnish with fresh parsley or cilantro!
